Juvenile fingerlings are purchased when they reach a weight of 5 grams and are carefully dispatched into sea cages on Southern Star’s Aquaculture farms to grow out to a product of between 3 to 5 kilograms.

| Our kingfish are hand fed on pellets which are specifically designed for Yellowtail Kingfish and their growth rate, health and water conditions are monitored daily which enables Southern Star Aquaculture Pty Ltd to grow a quality product. |
| The waters of Fitzgerald Bay are particularly suited to this venture due to: |
- High Salinity
- Twice daily tidal movements of around 2 metres
- Annual water temperature of between 14 to 24 degrees Celsius
- Wonderful clean environment.
